Breakfast Cookies

Dwight’s Breakfast Cookies


  • 3T hemp hearts
  • 3T oat bran
  • 1T chia seeds
  • 1/8t vital wheat gluten
  • 1/8t cinnamon
  • Dash of salt
  • Optional:  1/2 banana (mashed)  (OR 1/3 cup milk OR ½ small can of crushed pineapple)
  • 1T coconut oil (OR butter, peanut butter, or other butter of choice)
  • 1T sugar
  • Optional:
    • 2T chocolate chips (chopped)
    • 2T raisins (chopped)


Preheat the oven to 350 F.

  1. Mix the first six ingredients in a small bowl
    1. If adding chocolate chips, add them to these ingredients
  2. Combine last three ingredients in a small microwave-safe bowl or coffee cup and heat until coconut oil melts. Stir well
    1. If adding raisins, add them to these ingredients
  3. Combine wet and dry ingredients
  4. Place dough on greased cookie sheet and flatten with a fork to desired thickness
  5. Sprinkle a small amount of sugar on the top
  6. Bake for 15 minutes or until browned
  7. Let cool
